The Breville Smart Oven Air Fryer Rules My Small Space Kitchen

I cook almost every meal in this machine and it gets dinner on the table fast

Life in space is busy. When I walk into my kitchen after a long day editing footage, fixing machinery, or exploring, I am usually hungry enough to scarf a delivery pizza. But you can’t get pizza delivered when you are weeks from another vessel and alone in the black. You have to cook!

My go-to resource for this is the Breville Smart Oven Air Fryer Pro.

This baby can cook almost anything — and I have tested this — in around 10 minutes.

Turn a dial to switch from toast to roast to warm to air fry to slow cook to dehydrate — and more.

I do use all of those settings. But my go-to is “Air fry at 400 degrees for 10 minutes.”

I can pull a piece of fish out of the freezer, soak it in cold water while I put some rice in the Instant Pot, have a cocktail, slather the defrosted fish with some panang curry paste (whisked with a pour of oil and ponzu sauce), pop it in the oven for 10 minutes, and be eating a gourmet meal 20 minutes after I walk in the door. For most of that time, I was sipping a cocktail.

I could not live without this thing. I don’t know why I would want to.

If I had to choose between my wall oven and this baby, I would take this Smart Oven. I mostly store pans in my wall oven.

Here is my favorite recipe.

Air Fried Mahi

Ingredients:

1 – 4 Frozen Mahi Steaks

1 – 4 TBSP Panang curry paste

1 – 4 TBSP ponzu

1 – 4 TBSP olive oil (or any oil you like)

Directions:

Fill a shallow bowl with tepid water and immerse the fish — still in the plastic wrappers — in it. As the water gets cold, you can change it to speed up the defrosting process. It will take about 20 minutes.

In another bowl, whisk the other ingredients together. Feel free to get creative here. Add some lemon, herbs, and crushed garlic if you feel like it. Or just use those three ingredients. It will come out great.

When the fish is defrosted, use a basting brush to slather the paste all over both sides of the fish.

Put the fish on the enamel roasting pan that came with the Smart Oven — with the rack in it — and air fry for 10 minutes at 400 degrees. If the fish is defrosted and approximately the same size as the ones I linked to in the ingredient list, it will be perfect. Do not second guess this and put it back in for another minute. Eat!
